More hygienic habits urged in food service

    The China Restaurants Association has issued new rules for restaurants and other food and drinks businesses. The rules require businesses to adopt more hygienic dining habits. Service attendants or customers must take food from common dishes using common utensils, and eat it off their own dishes using their own utensils. The association encourages the dining habits in the aftermath of the outbreak of SARS and aims to create a safe and clean environment for consumers.

    According to the China Restaurants Association, the adoption of the separate dining system will be mandatory for businesses that have a service space of over 300 square meters and serve over 100 people at a time. Businesses with a service space less than 300 square meters are also encouraged to adopt the system.

    Many restaurant businesses have welcomed the new system. "For the service of Chinese cuisine, we will ensure the provision of serving utensils for food and dishes," said a restaurant manager.

    "The shift from the traditional ways of food service to the separate utensils provides a more hygienic way of eating," said another restaurant manager.

    According to the statistics from the China Restaurants Association, the adoption of the new system will help lower the infection rate of contagious diseases markedly.

    It is also estimated that the adoption of the new system will greatly reduce the waste of food and drinks service businesses by about 1.2 billion US dollars annually.
